Zucchini Fritters with Garlic and Dill

Step 1
First, prepare all the ingredients needed to make this great summer dish from young zucchini with garlic.
Step 2
To make the fritters, use a large grater and grate about 2.6 lb (1.2 kg) of young zucchini into a large bowl. Let them sit for 5 minutes.
Step 3
Squeeze the grated zucchini well with your hands in two rounds to remove excess liquid, then transfer them to another large bowl.
Step 4
In a small bowl, crack 2 eggs, add ½ teaspoon of salt, and whisk until smooth.

Finely chop a handful of fresh dill to taste.
Step 6
Pour the egg mixture into the bowl with the grated, squeezed zucchini.
Step 7
Add the chopped dill and 3 tablespoons of wheat flour to the same bowl.
Step 8
Press 2 cloves of garlic through a garlic press into the bowl, then mix all ingredients thoroughly.

Heat a suitable frying pan over high heat, add some vegetable oil. Once hot, spoon the zucchini mixture into the pan - about 1 tablespoon per fritter.

Fry the fritters until golden brown on both sides.

Place the cooked zucchini fritters with garlic and dill on plates and serve hot.
