Zucchini Fritters with Egg (Pan-Fried)

Preparation
Step 1
I made one portion using one zucchini and one egg. You may need more or less flour depending on the moisture of the zucchini.
Step 2
Wash and pat dry the zucchini. Which ones are best? Choose young ones with soft skin and small seeds. If using mature zucchini, peel off the tough skin and remove the seeds. Cut off the ends and grate it coarsely.
Step 3
Salt the grated zucchini and let it sit for 5 minutes. The salt will draw out moisture - you need to drain it. Squeeze the zucchini through a sieve, towel, or your hands. Discard the liquid – the mixture should be dry.
Step 4
Rinse and dry the herbs with paper towels. Finely chop them. I used dill, but parsley works well too.
Step 5
Crack an egg into the zucchini mixture, add the chopped herbs and about half the flour amount.
Step 6
Mix until uniform. If it’s still too runny, add a little more flour.
Step 7
Heat a skillet over medium heat. Add a bit of vegetable oil. Spoon the batter into the skillet, forming round fritters.
Step 8
Fry until golden brown on one side, then flip. If they tear or are hard to flip, add more flour. Cook the second side until golden too. Use low heat so the zucchini cooks through without burning.
Step 9
Remove the finished fritters onto a plate lined with paper towels - they’ll absorb excess oil. Repeat until all batter is used. I got 6 fritters from one zucchini.
Step 10
For the sauce, mix sour cream with salt, paprika, and black pepper to taste. For kids, you can serve plain sour cream.
Step 11
Serve the fritters warm with the sauce. Enjoy!
