Zucchini fritters

Preparation
Step 1
Grate the zucchini and season it with sea salt, then set aside.
Step 2
In a large bowl, whisk together the egg, baking powder, flour, and cumin, seasoning with freshly ground black pepper.
Step 3
Over the sink, squeeze out the excess water from the zucchini, then add the zucchini and peas to the prepared batter, mixing well until combined.
Step 4
Heat enough oil to just cover the bottom of a large frying pan over medium-high heat. When the oil begins to shimmer, drop in heaped tablespoons of the zucchini mixture and flatten each one gently with the back of a spoon to form fritters.
Step 5
Fry each fritter for 1-2 minutes on each side, or until they are golden brown. If working in batches, transfer the cooked fritters to a plate lined with kitchen paper to drain before serving.
