Zucchini for Winter with Tomato Paste

The most delicious vegetable preserve for winter! You can easily prepare zucchini with tomato paste. Garlic adds a piquant note. Serve zucchini with rice, buckwheat, and potatoes. They also go perfectly with any meat or fish dishes.

Preparation
Step 1
Wash the zucchinis, then cut off the stem ends.
Step 2
It’s better to use young zucchinis for this recipe. They have tender thin skin and soft small seeds. If you have mature vegetables, peel the skin and remove the seeds. Slice the zucchinis into rings about 0.5-1 cm thick, then cut each ring in half or into four pieces.
Step 3
Dilute the tomato paste in water until smooth. You can increase the amount of paste to 6-7 tablespoons to taste. Add vegetable oil, salt, and sugar.
Step 4
Put the zucchini into a pot and place it on the stove. Bring to a boil over high heat, stirring occasionally. Then reduce the heat to medium and cook until the zucchinis are soft and tender. This took me about 30 minutes.
Step 5
Add garlic pressed through a garlic press and vinegar to the pot. Stir and taste. Add salt, sugar, or vinegar if necessary. Cook for another minute or two.
Step 6
Sterilize jars and lids by any available method. Pour the hot salad into sterile jars and close with lids using a special canning key.
Step 7
Turn the jars upside down and wrap them in a thick blanket. Leave until completely cooled, then store in a dark, cool place for long-term storage.
