Step 1
First, prepare all necessary ingredients and spices for zucchini soup without adding potatoes.

Take a suitable pot, pour in 3 tablespoons of vegetable oil, and add one large chopped onion.

Grate half a medium carrot and add it to the pot with the onion. Cook over medium heat until the onion becomes translucent.

Cut 1 kilogram (2.2 lbs) of zucchini into medium pieces, add to the pot, stir, and cook for 5-7 minutes on medium heat.
