Zucchini Chebureki with Meat Filling

Juicy, tender, and filling with an incredibly tasty filling! Zucchini chebureki with ground meat can be served as an appetizer or a full hot dish. It's so unique, it will make a real splash at the festive table. You can adjust the filling to your liking.

Preparation
Step 1
Wash the zucchini thoroughly using a brush. If it’s young with a soft skin and small seeds, there’s no need to peel it. If it’s large and mature, with thick skin and large seeds, peel and remove the seeds. I used a young zucchini.
Step 2
Grate the zucchini on a medium grater. A large one works too, but medium makes the batter more delicate. Salt the zucchini, mix, and let it sit for 5 minutes to release juice. Then squeeze out the excess moisture.
Step 3
Wash and shake dry the dill. Finely chop it. You may replace or combine it with parsley, cilantro, green onions, or a mix of herbs.
Step 4
In a bowl, mix zucchini, chopped dill, and garlic pressed through a garlic press.

Separately, combine eggs and milk, whisk until smooth.
Step 6
Pour the egg-milk mixture into the zucchini and mix.
Step 7
Add vegetable oil and flour. Stir everything well until smooth. The zucchini batter is ready.
Step 8
Now prepare the filling. I used a mix of pork and beef, but you can use pork, beef, chicken, or a combination.

Finely dice the onion.
Step 10
Heat some oil in a pan over medium heat. Add the onion and sauté for a couple of minutes until translucent.
Step 11
Add the ground meat and fry, breaking up clumps, for 6-8 minutes.
Step 12
At the end, season with salt and pepper. Transfer the filling to a plate.

Heat some oil in a pan. Pour some zucchini batter to form a round pancake. Fry for a couple of minutes on one side.
Step 14
Place some meat filling on one half of the pancake.
Step 15
Fold over the other half to make a cheburek shape. Lightly press the edges so they stick. Fry on both sides for 4-5 minutes until golden brown. The number of chebureki depends on your pan’s size - the smaller the pan, the more chebureki you’ll make.

Transfer the ready zucchini chebureki with meat to a plate and serve hot. Enjoy!
