Zucchini Cake with Tomatoes and Garlic

Step 1
How do you make zucchini cake with tomatoes and garlic? Prepare the ingredients. Which zucchini work best? Choose young, small zucchini with tender skin. You may need more tomato, depending on how you slice it.
Step 2
Wash and dry the zucchini, then trim off the ends. Peel them. Very thin skin does not have to be removed. If you are using more mature zucchini, peel off the tougher skin and remove the seeded center. Grate the zucchini on a coarse grater. Squeeze the mixture with your hands and drain off the juice. Mine were quite dry, so there was almost no juice.
Step 3
Crack the eggs into the zucchini. Add salt and pepper. Mix until smooth.
Step 4
Begin adding the flour in portions, stirring after each addition. Be prepared that you may need more or less flour than the recipe states, depending on how juicy the zucchini are, the size of the eggs, and the properties of the flour itself. Judge by the consistency of the batter.
Step 5
It should become fairly thick, like regular pancake batter. I used 1 cup of flour, measured with a 200 ml glass, about 6.8 fluid ounces.
Step 6
Heat a frying pan over medium heat. I used a nonstick crêpe pan, 20 cm in diameter, about 8 inches. Add a little vegetable oil and spread it over the surface. Spoon in the batter, spreading it in a thin layer over the bottom to form a pancake.
Step 7
Fry the pancake over medium heat until browned on one side, then turn it over and fry until done. Remove the finished pancake and grease the pan again. Add the next portion of batter. Fry all the pancakes this way until the batter is used up. I got exactly 5. Let them cool completely.
Step 8
Peel and chop the garlic by grating it, pressing it, or simply mincing it with a knife. Add it to the mayonnaise and mix.
Step 9
Wash and dry the tomatoes. Cut them into slices or cubes. When I sliced them into rounds, I needed more tomatoes to assemble the cake.
Step 10
Assemble the cake by spreading each “layer” with garlic mayonnaise and layering it with tomatoes.
Step 11
Decorate the top of the cake with herbs and pieces of tomato. Serve. Enjoy your meal!
