Zucchini and Orange Jam
With a pleasant tang and delicate flavor, Zucchini and Orange Jam is a bright and unusual treat! It keeps perfectly until winter and delights not only with its taste but also its color. The vegetables absorb the citrus aroma so deeply that it feels like the jam is made entirely of oranges!

Preparation
Step 1
For this recipe, it’s best to use young zucchini. If yours are more mature, peel them and remove the seeds. Wash all fruits and vegetables thoroughly and pat dry with paper towels. Scrub the citrus fruits well and pour boiling water over them.
Step 2
Since my zucchinis are young and tender, I don’t peel them. Cut the zucchini into medium-sized cubes and transfer them to a pot or saucepan where you’ll cook the jam.
Step 3
Grate the zest from the washed lemons and oranges using a fine grater and add it to the zucchini.
Step 4
Peel off the white pith from the oranges and lemons, then cut the fruits into small pieces and add them to the zucchini. Make sure to remove all the seeds, both orange and lemon - even one can add bitterness to the jam.
Step 5
Sprinkle the ingredients with sugar and let them sit for a while until some juice is released. Stir, then cook the jam in two stages: bring it slowly to a boil over low heat, simmer for 2-3 minutes, skim off any foam, then remove from heat and cool completely to room temperature. Repeat the process once or twice - bringing to a boil, simmering briefly, and cooling again.
Step 6
If you plan to store the jam for the winter, pour it hot into sterilized jars and seal them tightly. Additional sterilization is not necessary. Enjoy your tea time!
