Zhizhig Galnash with Chicken

A delicious and hearty national meat dish. Zhizhig Galnash with chicken resembles chicken soup with homemade noodles in its ingredients and preparation, but differs in serving style. It can also be made with turkey, beef, pork, or even fine fish.

Step 1
Begin with the meat. You can choose any type, but with chicken, Zhizhig Galnash cooks faster. Rinse chicken fillet under running water, cut into small pieces, place in a pot, cover with cold water, bring to a boil, skim off the foam, reduce heat to medium, add salt to taste, and cook until done.
Step 2
Prepare ingredients for dumplings. Dumplings for Chechen Zhizhig Galnash are made from wheat or corn flour. Shapes vary, each cook has their own. Corn dumplings are usually made for festive tables, wheat dumplings for everyday meals.
Step 3
Make the dumplings. Sift flour into a deep bowl, add salt, crack in one egg, pour in cold water, and knead into elastic dough.

Knead the dough by hand until firm and stiff.
Step 5
Roll dough into a sheet about 0.4 in (1 cm) thick. Cut into strips about 1.2 in (3 cm) wide.
Step 6
Cut strips crosswise into pieces about 0.4 in (1 cm) wide. Stretch edges slightly in opposite directions so they twist a little.
Step 7
Remove meat from broth. Pour half the broth into another container (for the sauce). Keep the rest for cooking dumplings.
Step 8
Drop dumplings in batches into the boiling broth, stirring immediately to prevent sticking. Cook over medium heat for about 15 minutes.
Step 9
Prepare the sauce: peel garlic, chop, mash with salt, and pour in broth. The sauce is ready; serve in a small bowl.
Step 10
Remove dumplings with a slotted spoon, place them in a deep plate, put meat on top, and serve with a bowl of sauce on the side. Enjoy!
