Young Cabbage and Cod Liver Salad

Step 1
Prepare the necessary ingredients. Young white cabbage or pointed cabbage is ideal for this salad. Pointed cabbage was used in this recipe. First, peel the carrot and onion, and remove the tough outer leaves from the cabbage. Rinse all the vegetables and herbs in clean water.
Step 2
Slice the cabbage into very thin strips and place it in a salad bowl.
Step 3
Grate the carrot using a coarse grater or a grater for Korean-style carrots.
Step 4
Slice the shallot into thin feathers. You can use red salad onion or white salad onion instead of shallot in this salad. These onion varieties are excellent for vegetable salads because they have a milder flavor than regular yellow onion and are not very bitter.
Step 5
Cut the cucumber into thin slices. If you have a small young cucumber, you can slice it into rounds.
Step 6
Mash the cod liver lightly with a fork into pieces of different sizes. Do not overdo it, the liver should not turn into a puree. Add the liver pieces to the vegetables. Drizzle the salad with the oil from the cod liver. If you want a less fatty and lower-calorie dish, you can skip the oil entirely. Cod liver is fatty and high in calories on its own, so it may be rich enough without adding vegetable oil.
Step 7
Chop the herbs fairly finely and add them to the other ingredients. In this recipe I used dill, but parsley and green onion also work very well here. Salt the salad to taste and add pepper if desired.
Step 8
Mix the salad before serving. The dish is ready and can be served.
