Yeast Pies with Meat Filling in the Oven

Hearty homemade pastries from simple ingredients! A very easy recipe for yeast pies with mixed minced meat filling, baked in the oven. They surprise with rich flavor and will please everyone!

Preparation
Step 1
First, prepare the necessary ingredients and spices for making yeast pies with mixed meat filling in the oven.
Step 2
For the starter, take a large bowl and pour in 125 ml (½ cup) warm milk and 125 ml (½ cup) warm water, then add 1 tbsp sugar and 18 g (about 0.6 oz) fresh yeast.
Step 3
Add 3-4 tbsp flour (from the total amount) into the bowl and mix well. Leave for 15-20 minutes until the yeast activates and forms bubbles.
Step 4
In a small bowl, crack 1 egg, add ⅔ tsp salt, and beat until smooth. Pour this mixture into the yeast starter and stir.
Step 5
Add half of the 350 g (about 2 ¾ cups) sifted flour and 1 tsp baking powder. Mix and begin kneading the dough.
Step 6
Add the remaining flour and knead by hand. Then add 30 g (2 tbsp) softened butter and knead for about 10 minutes until elastic.
Step 7
Coat the dough with 1 tbsp vegetable oil, cover, and leave in a warm place for 1 hour.
Step 8
For the filling, heat a skillet, add 450-500 g (1 lb) mixed ground meat, and fry for 10 minutes on high heat.
Step 9
Finely chop 1 large onion, add to the skillet, and fry until transparent.
Step 10
Add oil if needed, ⅔ tsp salt, ½ tsp khmeli-suneli, ⅓ tsp ground pepper mix, ⅓ tsp coriander. Mix, cover, and simmer for 10 minutes on low heat until meat is cooked.
Step 11
Transfer filling to a bowl, cool, then add 1 beaten egg white and mix well.
Step 12
Place dough on an oiled surface, punch down, and divide into 12 equal pieces.

Roll each piece into a ball, cover with a towel, and let rest 20 minutes.

Flatten each ball into a circle, add 1 tbsp meat filling.
Step 15
Seal edges and form pies. Place on a parchment-lined baking tray. Let rise 10 minutes.
Step 16
Brush with egg yolk mixed with 2 tbsp warm milk. Bake in a preheated oven at 160 °C (320 °F) for 15-20 minutes until golden.
Step 17
Remove from oven and transfer to a plate.
