Yeast Pie with Jam

Preparation
Step 1
Sift the flour in advance to enrich it with oxygen. Choose thick jam to prevent it from leaking during baking. You can use dry or fresh yeast. The ratio of dry to fresh is 1:3. Heat the milk until it's warm.
Step 2
Dissolve the yeast in warm milk (approx. 96.8°F to 107.6°F / 36-42°C). Hot milk will kill the yeast. Add sugar, salt, and a bit of flour. Let it sit for 20 minutes - bubbles will start to appear as the yeast activates.
Step 3
Add melted (not hot) butter to the bowl. Crack in the eggs. Mix everything with a whisk.
Step 4
Gradually add the sifted flour while mixing. Start with a whisk. When the dough thickens, switch to a wooden spatula. Once it’s very thick, knead with hands greased with vegetable oil.
Step 5
Don’t add all the flour at once. Adjust based on the dough’s consistency. The finished dough should be soft and not stick to your hands. Cover with a towel and let it rise in a warm place for about 1 hour.
Step 6
Once the dough has risen well, you can start making the pie. Punch it down by hand.
Step 7
This dough makes two pies around 10-12 inches (25-30 cm) in diameter. You can also make one large or four small pies. Roll part of the dough into a circle - it’s easiest to do this directly on parchment paper.
Step 8
Spread thick jam or fruit spread over the dough, leaving the edges uncovered. Then fold the edges upward over the filling slightly.
Step 9
Use the remaining dough to decorate the top. Let the pie rest for 10-15 minutes. Brush with egg yolk and bake in a preheated oven at 375°F (190°C) for 20-25 minutes.
Step 10
The finished pie will be golden and aromatic. Remove from the oven, let it cool slightly, and enjoy. Delicious with milk or tea!
