Yeast Pie with Fresh Cabbage in the Oven

Step 1
First, prepare ingredients for the starter. Warm the milk slightly - it should be warm, not hot, or the yeast will die.

In a suitable bowl, dissolve yeast and sugar in the milk.

Sift flour into the yeast mixture.

Whisk until smooth with no lumps. Cover with a towel and leave in a warm place for about 20 minutes to rise.

Prepare ingredients for the dough. The milk should also be warm, not cold. Use neutral vegetable oil.

Sift flour into a deep bowl. Oxygenated flour helps the dough rise better and makes it fluffier.

By this time, the starter should have doubled in volume with many bubbles on the surface.

For the dough, in a large bowl whisk eggs with salt and sugar until smooth.

Pour in the warm milk and mix.

Add the risen starter and stir.

Add vegetable oil and mix lightly.

Add about ¾ of the sifted flour and mix with a spoon. Do not add all at once, since flour absorption varies.

The dough should be smooth, soft, elastic, and not sticky. Cover with a towel and let rise in a warm place for 70-80 minutes. Rising time depends on room temperature and yeast activity.

While the dough rises, prepare the filling. Boil eggs hard for 8-9 minutes, then cool in cold water for easy peeling.

Chop onion into small cubes.

Wash cabbage, remove outer leaves, and shred finely.

In a skillet with oil, fry onion for 3-4 minutes, stirring occasionally.

Add shredded cabbage, stir, and stew over medium heat until soft. Season with salt, pepper, or spices midway. If using young cabbage, it will reduce a lot in volume.

Peel boiled eggs and cut into small cubes.

Cool the cabbage and mix with chopped eggs.

The dough should have risen about 2.5 times in volume.

Gently punch down dough, transfer to a floured surface, and divide into two parts: larger for the base, smaller for the top.

Roll out the larger part into a circle, slightly bigger than the baking pan.

Grease a 9-9.5 inch (22-24 cm) baking pan with oil, line with parchment. Place dough inside, spreading across bottom and sides.

Roll out the smaller piece of dough. Cut out circles and arrange on top like a flower, or decorate as desired.
