Preparation
Step 1
Measure out the ingredients for the dough. Any milk fat content will work, just warm it slightly.
Step 2
Sift flour into a wide bowl with high sides to enrich it with oxygen. This makes the dough rise better and the pie fluffier.
Step 3
Activate the yeast: warm water slightly, dissolve yeast and 1 tsp sugar in it, stir well. Leave for 10-12 minutes until a foamy cap appears.
Step 4
In a large mixing bowl, beat the egg with the remaining sugar and salt until smooth.
Step 5
Add the warm milk, mix lightly.

Add the activated yeast, stir.
Step 7
Pour in vegetable oil, mix again.

Add most of the sifted flour. Don’t add all at once - you may need more or less.
Step 9
Start mixing with a spoon, then gradually add the rest of the flour while kneading by hand until the right consistency.

The dough should be soft, tender, pliable, and not sticky. Cover with a towel and let rise in a warm place.

While it rises, prepare the filling. Use pork, beef, or mixed ground meat.

Peel and finely chop the onion.

In a skillet, heat oil and sauté onion over medium heat until golden.

Add ground meat. Fry with onion, stirring and breaking lumps. Season with salt and spices. Cook until the meat turns brown.

Wash cabbage, remove outer leaves, and shred thinly.

Sauté cabbage with some oil until cooked, stirring often. Add a few spoons of hot water if needed. Season with salt while cooking.

Mix the cabbage with the ground meat. Cool completely.

After 80-90 minutes, the dough should rise 2-2.5 times.

Punch it down and place on a floured surface. Divide into two parts: larger for the bottom, smaller for the top. Save a little for decoration.

Roll out the larger piece into a round sheet, bigger than your baking pan to form edges.

Line a 22 cm (9 in) pan with parchment, grease the sides with oil. Place dough inside, forming edges.

Spread the filling evenly.

Roll out the smaller dough piece and cover the filling. Seal edges well. Make a small hole in the center for steam to escape.

Cut shapes from leftover dough to decorate the top.

Beat the yolk with a little milk.

Brush the pie with yolk mixture.

Bake in a preheated oven at 180°C (356°F) for 30-35 minutes until golden. If it browns too quickly, cover with foil. Cool slightly in the pan before removing.
