Yeast-Free Vegan Fritters
Fluffy, airy, tasty, soft, tender, cheap, easy! These vegan fritters are not only yeast-free, but also egg-free and dairy-free. Minimum calories, maximum pleasure. Serve them for breakfast or dinner with sweet or savory sauces, or with sour cream.

Step 1
How to make yeast-free vegan fritters? First, prepare the ingredients you’ll need. Use bottled or boiled water - warm. Use all-purpose wheat flour (premium grade). Use apple cider vinegar (you can replace it with regular vinegar).
Step 2
Take a deep bowl. Sift the flour through a fine sieve to aerate it and make the batter lighter.
Step 3
Add sugar and salt to the sifted flour.
Step 4
Mix all the dry ingredients well. You don’t have to add all the flour at once - save a little to adjust later, since you may need more or less flour than I did.
Step 5
Pour warm water into a suitable container, then add 1 tablespoon of apple cider vinegar.
Step 6
Pour the water mixed with vinegar into the bowl with the dry ingredients.
Step 7
Mix everything well and make a smooth, even batter. Cover the bowl with a kitchen towel and let it rest for 30 minutes to develop gluten.
Step 8
Place a skillet on the stove and pour in enough vegetable oil to fully cover the bottom. Turn the heat to medium and warm the skillet.
Step 9
After the resting time, add baking soda to the bowl with the batter.
Step 10
Mix everything thoroughly again. The batter should be neither too thick nor too runny. In a hot pan it shouldn’t spread - it should set right away and hold its shape.
Step 11
Spoon portions of batter (1 tablespoon each) into the skillet with hot oil and fry over medium heat until golden on one side.
Step 12
Flip the fritters and fry until golden on the other side.
Step 13
Cover the skillet with a lid and, turning off the heat, let the fritters finish cooking through. It took me about 1½ minutes - adjust to your stove.
Step 14
Transfer the cooked fritters to a plate and serve.
