Step 1
Prepare the needed ingredients for baking delicious yeast-free cheese buns. Start making choux pastry and pour 100 ml (about 1/3 cup + 1 tbsp) water into a saucepan.

Pour 100 ml (about 1/3 cup + 1 tbsp) milk into the saucepan.
Step 3
Add 100 g (3.5 oz / about 7 tbsp) butter to the saucepan.
Step 4
Place the saucepan on the stove and, stirring, bring the milk-butter mixture to a boil over medium heat.
Step 5
Put 120 g (about 1 cup) flour into a bowl, add salt to taste, and mix.

Add the flour to the saucepan in portions.
Step 7
Mix all the ingredients in the saucepan well.
Step 8
Knead the dough until smooth and uniform.

Remove the saucepan from the heat; stir and cool the dough for about 3 minutes.

Add 4 eggs, one at a time, to the saucepan with the dough, mixing after each addition.

Mix everything thoroughly until smooth.

Add about 100 g (3.5 oz) hard cheese, finely grated, reserving a little for sprinkling. Mix well.

Add a little nutmeg to taste.

Add a little mixed pepper blend to taste for aroma.

Mix everything well - the dough of the needed consistency is ready.

Transfer the dough into a piping bag.

Pipe small buns onto a baking sheet lined with parchment paper.

Sprinkle the buns with the reserved grated cheese and place the tray into an oven preheated to 200°C (392°F).
