Yeast-Free Buns Baked in the Oven

Step 1
How do you make yeast-free buns? Prepare the ingredients for the dough. The butter and kefir should be cold, so don’t take them out of the fridge until you need them. Cut the cold butter into small cubes. Use all-purpose flour (or bread/pastry flour if that’s what you have), preferably of good quality.
Step 2
Sift the flour into a large bowl.

Add the pieces of butter to the flour and rub with your hands until you get fine crumbs.
Step 4
Combine the kefir with the egg, sugar, and salt, and mix thoroughly.
Step 5
Pour the kefir-egg mixture into the flour crumbs and quickly knead a pliable dough. At first the dough is sticky, but gradually it will pull away from your hands and become smooth, soft, and elastic. You may need a little more or less flour - go by the dough’s consistency.
Step 6
Shape the dough into a ball, wrap it in a bag, and refrigerate for 3-4 hours.
Step 7
While the dough chills, prepare the filling. The dough has a neutral taste, so the filling can be anything - sweet or savory. I used black currants with sugar.
Step 8
Rinse the black currants (or other berries) well and pat dry on paper towels. Add sugar and cornstarch (or potato starch) to the berries and mix.

The starch will thicken the filling during baking.
Step 10
Divide the chilled dough into 10-12 pieces.
Step 11
Roll each piece into a medium round, not too thin so it won’t tear when shaping. Place about 1 tablespoon of berries in the center.
Step 12
Pinch the edges together and shape a neat, medium-size bun. Shape the rest the same way.
Step 13
For brushing, beat an egg with a fork in a small bowl until the white and yolk are combined.
Step 14
Place the buns on a baking sheet lined with oiled parchment paper. Brush the tops with the beaten egg. Bake for 20-25 minutes at 180°C / 356°F, until golden. Time and temperature may vary depending on your oven. Enjoy your meal!
