Preparation
Step 1
How do you knead yeast dough for pies with dry yeast? Prepare the necessary ingredients. If you like, the butter can be replaced with the same amount of margarine. Use instant dry yeast, which can be mixed directly with the flour. If you have active dry yeast, dissolve it in warm milk first. Sift the flour through a sieve. This will aerate it, and the finished dough will be more tender.
Step 2
Melt the butter or margarine in a double boiler or in the microwave.
Step 3
Mix all the dry ingredients together: sugar, yeast, salt, and sifted flour. You may need a little more or a little less flour than stated, so at first it is better to use about 400 grams, about 3 1/4 cups, and then add more during kneading until the dough reaches the right consistency. If you are using active yeast, add it dissolved in warm milk in step 5.
Step 4
Add the eggs to the flour mixture.
Step 5
Pour room-temperature milk and the melted, cooled butter or margarine into the dough mixture.
Step 6
Start kneading the dough, adding more flour if needed. The dough should not stick to your hands, but at the same time it should not be too stiff.
Step 7
Cover the dough with a clean towel and place it in a warm spot for 1 hour. There is no need to punch it down. After 1 hour, the dough is ready to use. You can immediately start shaping the pie. This amount of dough makes 1 large pie, about 26 cm or 10 inches in diameter, or 1 small pie and 6 hand pies. If you need to bake 1 small pie, about 18-20 cm or 7-8 inches in diameter, cut the ingredient amounts in half.
