Yeast Dough Donuts in Chocolate Glaze

Preparation
Step 1
First, prepare the necessary ingredients for making chocolate yeast donuts.
Step 2
For the starter, take a large bowl, pour in 1 cup (250 ml) room-temperature milk, add 2.5 oz (70 g) sugar, and 0.7 oz (20 g) fresh pressed yeast.
Step 3
Add 3 tbsp of high-quality wheat flour, mix well, then cover and place in a warm spot for 15-20 minutes to activate the yeast.
Step 4
In a small bowl, crack two eggs, add 1 tsp vanilla sugar, and beat until smooth.

Pour the egg mixture into the sponge and mix thoroughly.
Step 6
Grate the zest of one lemon and add it to the bowl, mixing well.

Using a fine sieve, gradually sift about 3 cups (400 g) of high-quality wheat flour into the bowl, then add 1 tsp baking powder and 1/3 tsp salt.

Mix all ingredients well and knead the dough.

Continue kneading by hand, adding 2 oz (60 g) softened butter.

Gather the dough into a ball, coat lightly with vegetable oil, cover with a napkin, and place in a warm spot for 1 hour.

Lightly oil the work surface and your hands. Place the risen dough, knead it, form a ball, cover with a bowl, and let it rest for 20 minutes.

Punch down the dough, divide it into two parts. Shape each part and divide into 10 pieces. Roll each piece into a ball and set aside to rest.

Using a suitable stick, make holes in each ball, then enlarge them with your fingers to form donuts. Place them aside, cover with a napkin to rest.

Heat a suitable frying pan, pour in about 1¼ cups (300 ml) vegetable oil, heat well, then fry donuts until golden brown on both sides over medium heat.

Once slightly cooled, dip each donut into a glaze made from 3.5 oz (100 g) dark chocolate and 3.4 fl oz (100 ml) cream. Sprinkle with confectionery toppings as desired and place on a plate.
