Step 1
How do you bake beautiful and tasty yeast dough buns with sausage in the oven at home? Prepare all the necessary ingredients. Choose sausage according to your taste. Sift the flour through a sieve or using a special flour sifter. This will make the baked goods airier.
Step 2
First, make the sponge. Dissolve the sugar and dry yeast in warm milk, 38–40°C / 100–104°F. Let the sponge stand in a warm place for about 20 minutes, until a fluffy yeast cap appears. If no foamy cap appears, the yeast is poor quality and you need to use another one. Otherwise, the ingredients may be spoiled.
Step 3
How do you knead the dough? Pour the sponge into a deep bowl. Add the egg and mix.

Add most of the flour and the salt to the bowl.
Step 5
Knead the dough, gradually adding the remaining flour. Since flour from different producers has different properties, you may need a little less or more. Judge by the desired dough consistency.

Take the butter out of the refrigerator in advance. You can slightly soften it over a water bath or in the microwave, but do not melt it until liquid. Add the soft butter to the dough in portions. Continue kneading the dough.

You will get a soft, elastic dough that does not stick to your hands. Shape the dough into a ball.

Leave it in a warm place for 1.5–2 hours. During this time, punch down the dough once or twice.
Step 9
How do you make the filling? Take the cooked sausage and remove the packaging.

Cut the sausage into round slices no thicker than 5 mm / about 1/5 inch.

Divide the dough into 2–3 parts.

Roll each part into a sheet about 5 mm / about 1/5 inch thick.

Cut circles from the dough with a diameter slightly larger than the diameter of the sausage. You can use a round cutter or a glass for this.

Now shape the buns. Place a sausage slice on a dough circle, then add another dough circle on top, followed by another sausage slice and another dough circle.

In this way, you should get 5 layers of dough and sausage. Pinch the edges of the dough together thoroughly.

Using a knife, make deep cuts in the bun without cutting all the way through: 3 cuts on one side and 2 cuts between them on the other side.

Gently turn the dough strips outward, filling side up. Fasten the edges of the buns together.

Line a baking sheet with parchment paper and lightly sprinkle it with flour so the buns do not burn. Transfer the buns to the baking sheet, cover with a clean towel, and leave to proof for 20 minutes. Crack the egg into a small bowl, beat it lightly, and brush the buns with it. This will give them a golden color.
Step 19
Place the baking sheet in an oven preheated to about 180°C / 356°F and bake the buns for about 50 minutes, until the tops are golden brown. The time is approximate, so adjust it according to your oven. Let the finished beautiful homemade yeast buns with filling cool slightly, then serve. Enjoy!
