Yeast Dough Buns with Jam

Step 1
Warm the milk slightly. You can use any berry or fruit jam; I used raspberry.
Step 2
Sift the flour through a sieve to aerate it. This makes the dough lighter, and the buns fluffier.

Melt the butter over low heat or in the microwave.
Step 4
In a small bowl, mix yeast, 1 tsp sugar, and about 3 Tbsp (50 ml) warm milk. Stir well and leave for 10-15 minutes until a foam “cap” forms.
Step 5
In a large bowl, whisk the egg with sugar, salt, and vanilla sugar until smooth.
Step 6
Add the remaining warm milk, stir slightly.
Step 7
Add the yeast mixture and mix.

Add the melted (not hot) butter and stir again.

Add the sifted flour. Do not pour it all at once, you may need less. Mix first with a spoon.

Gradually add the rest of the flour in small portions, stirring each time. The dough will first be sticky but will firm up. Avoid adding too much flour, or the dough will be heavy.

The dough should be soft, tender, and barely sticky. Cover with a towel and leave in a warm place for 80-90 minutes.

The dough should rise about 2.5 times. Now you can shape the buns.

To shape beautifully: punch down the dough, place on a floured surface, and roll into a rectangle.

Spread jam over the dough, leaving about 0.4 in (1 cm) around the edges.

Mentally divide the dough lengthwise into 3 parts and fold it in thirds.

Press the edges to seal.

Cut across into strips about 1 in (2.5 cm) wide.

Twist each strip 3-4 times and form a ring. Seal ends well so they don’t open while baking.

Place the buns on a parchment-lined baking sheet. Cover with plastic wrap and let rest for 15 minutes.

Beat an egg with a little milk until smooth.

Brush the tops of buns with the egg-milk mixture.

Bake in a preheated oven at 350°F (180°C) for 20-25 minutes until golden brown. Adjust time to your oven.
