Yeast Cake in the Bread Maker

Fluffy and very tasty. The perfect baking with no extra hassle! Yeast cake in the bread maker is very similar to a kulich – it has a porous, airy crumb and is incredibly delicious! You just need to place all the ingredients into the bread maker and start the program. A great option when you’re short on time!

Preparation
Step 1
Take the milk, butter, and eggs out of the fridge in advance so they can warm to room temperature. The butter should soften. You may need more or less flour than specified in the recipe. Wash and dry the raisins. You can skip the raisins if you prefer. This recipe makes a 750g cake; I made half the portion.
Step 2
Take the bread maker's bucket and install the mixing paddle. In my model, ingredients for the dough are added in this order: first liquids, then dry ingredients. The order may vary in other models, so refer to your bread maker's instructions. Warm the milk until it's lukewarm, and pour it into the bucket. It should be warm, but not hot, to avoid killing the yeast. Crack the egg into the milk, then add the softened butter. Sprinkle in sugar and salt.
Step 3
Sift the flour into the bucket. Sifting not only removes impurities but also aerates the flour, making the dough fluffier. To avoid overloading the dough with flour, I added most of it but kept a little aside. Make a small well in the center and add the yeast. The yeast should not come in contact with the milk at this stage.
Step 4
Place the bucket in the bread maker and start the appropriate program for sweet dough. On my bread maker, the program is called "Sweet Bread." For a 750g cake (since I made half, I set it for 500g), I always choose a light crust because my bread maker browns everything quickly. The kneading process will start. Add the washed and dried raisins. Use a silicone spatula to scrape the flour from the walls to help the machine.
Step 5
Check the dough consistency. If it seems too liquid, add a couple of spoonfuls of flour. If it’s too dry, add a little more milk. You should end up with a smooth dough ball that doesn’t stick to the sides of the bucket.
Step 6
Once this happens, close the lid and let the bread maker run until the end of the program. After the signal indicates the program is complete, open the lid and remove the bucket.
Step 7
Flip the bucket over and gently shake out the cake. If the paddle is stuck, use a hook to remove it. Let the cake cool under a towel.
Step 8
Serve the cake with a dusting of powdered sugar if desired. Enjoy your meal!
