Yeast Buns with Water

Airy, fluffy, and fragrant, these buns disappear from the table instantly! Made with simple yeast dough (which you can use universally by reducing sugar), they come out very soft and are topped with a sweet, crunchy streusel crumb.

Preparation
Step 1
Measure all dough ingredients. Sift the flour to enrich it with oxygen, which helps the dough rise well and makes it airy. Slightly warm the water. Melt the butter in a microwave or double boiler and cool to room temperature.
Step 2
First, prepare the yeast mixture. In a small bowl, combine the yeast, 1 tsp of sugar, and half the water. Stir well and let sit for 10–12 minutes until a foamy "cap" forms. That means the yeast is active.
Step 3
In a large mixing bowl, whisk the egg with salt, sugar, and vanilla sugar until smooth.
Step 4
Add the remaining warm water and mix.

Add the activated yeast mixture and stir.
Step 6
Pour in the cooled melted butter and mix again.
Step 7
Gradually add sifted flour (do not add all at once). Stir initially with a spoon.
Step 8
Add more flour little by little, mixing constantly. The amount of flour depends on the dough texture. Too much will make it heavy and stiff.
Step 9
Knead a soft, smooth dough that doesn't stick to your hands. Cover with a towel and leave in a warm place for 70–80 minutes.
Step 10
Prepare the streusel. The butter must be cold.

In a bowl, combine sifted flour, sugar, and cold butter.

Rub with your fingers into crumbs. If too wet, add a bit more flour. Chill the streusel in the fridge.
Step 13
Once the dough has doubled or tripled, it's ready. Preheat the oven to 350°F (180°C).

Gently deflate the dough and roll it out on a floured surface into a rectangle.

Brush the surface with softened butter.

Cut the dough into strips (width of your choice). I made 14 strips.

Roll each strip into a spiral ("rose" shape), pinching the end to hold.

Place the shaped buns on a baking sheet lined with parchment paper, spaced apart. Cover lightly with a towel and let rise for 15–20 minutes.

Brush the buns with an egg yolk mixed with milk.

Sprinkle the streusel on top. Leftovers can be frozen for later use.

Bake in a preheated oven at 350°F (180°C) for about 25 minutes, or until golden. Adjust time depending on your oven’s features.
