Yeast buns with sausage and cheese

Step 1
Place the flour, yeast, salt, and sugar in a bowl. Drizzle in the olive oil, then add the water, mixing until the dough forms. Work in the chopped sausage, 50g/1¾oz of the grated cheese, and the chopped chives (or other herbs).
Step 2
Knead in the bowl for about a minute until the ingredients begin to combine, then transfer to a floured surface and knead until smooth. Return the dough to the bowl, cover with a damp cloth or cling film, and leave in a warm place for 1½–2 hours, or until doubled in size.
Step 3
Preheat the oven to its highest setting. Knock back the risen dough and divide into 8-10 equal pieces. Shape into balls and arrange them in a 28cm/11in cake tin or small roasting tin lined with greaseproof paper. Cover with a damp towel and let rise for 20-30 minutes, or until puffed and just starting to touch.
Step 4
Lightly brush the tops with egg glaze, being careful not to deflate the dough, then sprinkle with the remaining 50g/1¾oz of cheese. Bake for 20-25 minutes, or until golden brown and cooked through. The buns should sound slightly hollow when tapped. Serve warm straight from the oven or enjoy cold.
