Winter Salad with Tomatoes, Garlic, Peppers, and Carrots

- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Thoroughly wash the vegetables and remove seeds from the peppers.
Step 2
In a large pot where you will cook the salad, grate the carrots using a Korean-style grater.
Step 3
Pass the garlic and tomatoes through a meat grinder with a large grid.
Step 4
Place the pot on a heated stove, bring to a boil, and cook for 15 minutes.
Step 5
Add the pepper cut into salad-sized strips, salt, sugar, vegetable oil, dried herbs, and vinegar essence to the tomatoes and carrots.
Step 6
Mix everything well and cook for another 10 minutes.
Step 7
Spoon the salad into sterilized jars, cover with lids but do not seal them tightly.
Step 8
Place the jars in a large pot lined with a cloth on the bottom. Once the water boils, sterilize the jars for 15 minutes.
Step 9
The water in the pot should reach just below the jar rims.
Step 10
Seal the jars tightly. Cool them wrapped in a warm blanket for one to two days, then store in a dark, cool place (cellar or refrigerator).
