Step 1
Prepare all the necessary ingredients. Choose high-quality tomato paste.
Step 2
Wash the cucumbers thoroughly under running water, using a medium-hard brush if needed. Cut off the ends and slice the cucumbers into 0.5-0.7 cm (1/4 inch) thick half-moons.

Transfer the sliced cucumbers to a pot. Add salt and sugar. Then, pour in 9% vinegar, vegetable oil, and tomato paste. Mix everything well, cover with a towel or lid, and let it sit at room temperature for 40 minutes. The cucumbers will release juice, which is essential for making the salad.
Step 4
Meanwhile, sterilize the jars. Wash them with baking soda under running water and place them upside down in a cold oven. Heat the oven to 150°C (300°F) and sterilize 0.5L (pint-sized) jars for 10 minutes, 1L (quart-sized) jars for 15 minutes. Wash the lids and boil them. You can also sterilize the jars by steaming or in the microwave.
Step 5
Place the pot on the stove and bring it to a boil over medium heat, stirring frequently to prevent burning. As it cooks, the salad will release more juice, and the cucumbers will change color. Simmer the salad for 10 minutes, stirring constantly. Be careful, as the boiling tomato mixture may splatter.
Step 6
Pour the finished cucumber salad into clean jars and seal them with lids. Turn the jars upside down, wrap them in a blanket, and let them cool completely. From the given amount of ingredients, I got two 700ml jars and a small portion for tasting. Store the preserved salad in a cool place. Enjoy!
