Wild Boar Meat Baked in the Oven

Preparation
Step 1
If the meat is frozen, defrost it beforehand. I used the thigh part. You can add bell pepper, eggplant, or zucchini to the vegetables. Peel the garlic. Preheat the oven to 350°F (180°C).
Step 2
Rinse the meat and pat dry. Trim off membranes and sinew.
Step 3
Using a sharp knife, make small cuts all over the meat. Insert a garlic clove and a rosemary sprig into each cut. If garlic cloves are large, slice them in half or thirds.
Step 4
Sprinkle ground pepper mix, salt, and crushed juniper berries over the meat. Add a few rosemary leaves. Drizzle with olive oil. Rub the spices into the meat using massaging motions. Cover with a plate or plastic wrap and refrigerate to marinate for about 1 hour.
Step 5
Peel the onion, carrots, and potatoes. Wash, dry, and chop the vegetables into large chunks.
Step 6
Season vegetables with your favorite spices, salt, and pepper. Mix well.
Step 7
Line a baking dish with parchment paper. Place the meat in the center and the vegetables around it. Drizzle with olive oil. Bake for about 30 minutes.
Step 8
Pour white wine over the meat. Cover the dish with a lid or foil and slow-roast for 1.5 to 2 hours. Cooking time may vary depending on your oven and the age of the animal. I baked mine at 350°F (180°C) for about 1.5 hours.
Step 9
Turn off the oven. Pour the meat and vegetables with the juices from the pan. Let it rest in the cooling oven for another 15–20 minutes. Done and ready to serve!
