Whole Wheat Bread Baked in the Oven with Potato Broth

Step 1
How do you make the tastiest whole wheat bread with dry yeast and potato broth in the oven? Before you start, prepare the ingredients you’ll need for baking homemade bread.
Step 2
Take a large bowl and pour in 200 ml warm vegetable broth (about 3/4 cup + 1 Tbsp + 1 tsp), made from 1 potato, 1/2 carrot, and 1/4 onion. Add 1 heaping teaspoon dry yeast.
Step 3
Add 3 tablespoons of flour from the total amount, pre-sifted through a coarse sieve.
Step 4
Add 1 teaspoon sugar and mix everything well. Then place the bowl in a warm spot for 15 minutes to activate the yeast.
Step 5
Sift 300 g whole wheat flour (about 2 1/2 cups) into the bowl with the activated yeast through a coarse sieve, then add 1 teaspoon salt.
Step 6
Start kneading the dough, mixing all the ingredients well in the bowl.
Step 7
Add 3 tablespoons vegetable oil to the dough.
Step 8
Continue kneading the dough thoroughly by hand in the bowl for 10 minutes, until it reaches the desired consistency.

Gather the dough into a ball and leave it in the bowl. Grease it with a little vegetable oil, cover the bowl with a kitchen towel, and place it in a warm spot for 1.5-2 hours.

After that time, punch down the risen dough well in the bowl.

Gather the dough into a ball again, cover the bowl with a kitchen towel, and refrigerate for 8-10 hours to develop the gluten.
Step 12
When the time is up, dust the table with a little flour and turn out the dough. Let it rest for 1 hour to come to room temperature, then flatten it into a disk.

Fold the disk from two sides, keeping the smooth side on top, and press firmly.

Fold the disk once more from each side.

Press the seams and shape the dough into a bread loaf.

Place the shaped dough on a baking sheet lined with baking paper and leave it in a warm place to proof.

After 80 minutes, make random cuts on top of the dough, then lightly moisten the surface with salted water.

Dust the top with a small amount of sifted flour, then place the baking sheet in an oven preheated to 190°C (375°F).

Bake for 30-35 minutes, until fully done.
