Preparation
Step 1
First, prepare the necessary ingredients for the filling. You can modify or replace the vegetable mix to your liking. Ready-made frozen rice and vegetable mixes can also be used.
Step 2
Rinse the rice thoroughly until the water runs clear. Then boil it in salted water for about 10 minutes until half-cooked. Drain and let cool.
Step 3
Remove seeds and stems from the bell pepper and dice it into small cubes.
Step 4
Mince the garlic or press it through a garlic press.
Step 5
In a bowl, combine the rice, diced bell pepper, green peas, corn, and garlic. Season with salt and pepper, then mix everything well.

Now prepare the chicken. You can use any size bird. Keep in mind that a smaller chicken will require less stuffing and a shorter baking time.

Wash and pat dry the chicken. Rub it with salt and pepper both inside and out. Stuff the chicken tightly with the rice-vegetable mixture. If there’s leftover filling, you can cook it separately: place it in a skillet, add enough water to cover it, and simmer until fully cooked.

To prevent the stuffing from falling out, secure the opening with toothpicks and tie the legs together with kitchen twine. To prevent sticking, brush the chicken with vegetable oil.

Place the stuffed chicken in an oven bag, tie both ends, and put it on a baking sheet. Bake in a preheated oven at 350°F (180°C) for 1 to 1.5 hours, turning the baking sheet occasionally for even cooking. Exact time will depend on the size of your chicken and your oven.

To get a golden crust, carefully cut open the bag after the cooking time is up and return the chicken to the oven for another 10-15 minutes, basting it with the juices from the bottom of the pan.
