White Radish and Carrot Salad
Fresh, crunchy and made entirely from raw vegetables, this quick salad works well on its own or as a side for meat, poultry or fish. The tangy dressing combines soy sauce, lemon, garlic and spices.

Preparation
Step 1
Prepare the ingredients. You can replace the white radish with regular radishes. If desired, add cucumber or young zucchini.
Step 2
Peel the white radish and grate it coarsely or cut it into thin julienne strips using a suitable grater.
Step 3
Peel the carrot and grate it in the same way.
Step 4
Wash and dry the bell pepper, remove the seeds and stem, then cut the flesh into thin strips. For a more colorful salad, use half of two differently colored peppers.
Step 5
Finely chop the cilantro and parsley. If desired, replace or combine them with dill, green onions or other fresh herbs.
Step 6
Prepare the dressing ingredients. Brown sugar can be replaced with regular sugar. If using teriyaki sauce instead of soy sauce, you can omit the sugar because teriyaki is already sweetened.
Step 7
In a small bowl, combine the balsamic vinegar, soy sauce, lemon juice and sugar. Add the pressed garlic, turmeric and ground coriander and mix thoroughly. If you do not have balsamic vinegar, replace it with regular, apple cider or wine vinegar. Taste before adding salt, as the soy sauce may already provide enough.
Step 8
Place the prepared vegetables and herbs in a bowl. Pour over the dressing, mix and leave to marinate at room temperature for 20–25 minutes.
Step 9
Heat the vegetable oil and pour it over the vegetables. Mix well, sprinkle with sesame seeds and serve garnished with fresh herbs.
