White chocolate blondies

Preparation
Step 1
Preheat the oven to 180C. Lightly grease and line a 22x22cm square baking tin with baking paper.
Step 2
In a large saucepan, melt the butter together with the sugars, vanilla, and salt. Allow the mixture to cool in the pan for 10 minutes before adding the eggs. Beat the eggs in with a wooden spoon until the mixture is smooth.
Step 3
Add the flour and baking powder, stirring until the batter is completely smooth and free of lumps. Gently fold in the chopped to pieces white chocolate and pour the mixture into the prepared tin.
Step 4
Bake on the middle shelf of the oven for 30 minutes, or until the blondies feel firm to the touch and a skewer inserted into the centre comes out clean. Let the blondies cool in the tin, then slice into squares.
Step 5
Store in an airtight container for 4–5 days or freeze for up to 2 months.
