White Cabbage Side Dish

Preparation
Step 1
Prepare all the necessary ingredients. If possible, it is better to use young cabbage and freshly harvested carrots. Although it is also entirely possible to make a tasty vegetable side dish from last year’s vegetables. Wash all the vegetables beforehand in cold running water.

Peel the onion and cut it into cubes. In principle, the cutting method will not affect the taste, so you can also cut it into rings or half-rings. To keep the onion from irritating your eyes while cutting, rinse the onion and the knife with cold water. A cutting board will not absorb the unpleasant onion smell if you rub it with a piece of lemon before slicing.
Step 3
Peel the carrot and grate it on a coarse grater. Keep in mind that the final result in the dish also depends on how you shred the carrot: grated carrot will blend evenly with the other ingredients during cooking, while carrot cut into strips or sticks will keep its shape. So you can choose the shredding method according to your taste.
Step 4
Heat the vegetable oil for frying in a frying pan. It can be any type, corn, rapeseed, sunflower, or any other, the main thing is that it is refined. Fry the onion over medium heat for about 5 minutes until golden, stirring with a spatula so it does not burn.
Step 5
Add the carrot to the onion. Fry everything together for about 7 more minutes, stirring. The vegetables should fry, not stew, that way the dish will turn out much tastier.
Step 6
Wash the cabbage well and remove the top 3 leaves. A lot of dirt and bacteria accumulate on the outer leaves of the cabbage.
Step 7
Cut the cabbage in any convenient way. I shredded it thinly, but you can also chop it more coarsely. Add the cabbage to the pan. Mix it.
Step 8
Add salt to taste. This will make the cabbage release liquid, become less firm, and reduce in volume. If you wish, you can also add other herbs or seasonings: ground pepper, garlic powder, paprika, everything according to your taste and preference. Fresh herbs also work very well: parsley, cilantro, dill, and basil. Just wash the herbs beforehand and dry them with a paper towel.
Step 9
Cook the dish over medium heat for about 15 minutes, covered with a lid. Then remove the lid and fry the vegetables well until they are deeply golden and slightly crisp. Your cooking time may be longer or shorter depending on the type of cabbage and your taste. During cooking, the cabbage should become soft. If you prefer cabbage with more texture, you can cook it a little less.

Cabbage goes very well with smoked sausages or frankfurters, cutlets, and also pairs well with meat or fish. The side dish also complements mashed potatoes or buckwheat. Try sprinkling the cabbage with fresh herbs and serving it with a poached egg or boiled beans. Store the cooled side dish covered in the refrigerator for up to 3-4 days. Enjoy your meal!
