White bean soup with bacon

Preparation
Step 1
In a large saucepan, heat the oil over medium heat. Add the chopped onion and cook for about 3 minutes, stirring regularly, until it begins to soften and take on some color.

Add the bacon and continue cooking for another 2 minutes until lightly browned. Sprinkle in the garlic and fry for an additional minute, stirring frequently.

Add the cannellini beans to the pan, season with salt and pepper, and cook for 2 minutes, stirring to combine.
Step 4
Crumble in the stock cube and pour in 600ml (20fl oz) of water. Bring to a boil, then reduce the heat and let it simmer gently for about 5 minutes, stirring occasionally.
Step 5
Stir in the spinach and cook for another 1-2 minutes until wilted. Adjust seasoning with a little more pepper if needed, and serve hot.
