Preparation
Step 1
In a food processor, blend together the green seasoning, carrot tops, and chives. While the motor is running, slowly drizzle in the olive oil until the mixture reaches a coarse, pesto-like texture. Transfer this green sauce to a bowl and set aside. Wash the food processor bowl to prepare for the next step.
Step 2
Place the feta and yogurt into the cleaned food processor and blend until completely smooth and creamy. Taste and season with salt and pepper as needed.
Step 3
To serve, spoon the whipped feta into a serving dish and swirl the green sauce through it. Drizzle with a little more olive oil, crack over some black pepper, and garnish with toasted seeds and any extra carrot tops you have reserved. Serve immediately.
