Wheat and Rye No-Yeast Bread with Kefir

A healthy pastry made from the most affordable ingredients! A very simple and quick recipe for airy no-yeast bread with kefir and grain flakes that will pleasantly surprise you with its wonderful taste!

Preparation
Step 1
First, prepare all the necessary ingredients to make delicious homemade wheat and rye no-yeast bread.
Step 2
For the dough, take a large bowl and pour in 500 ml (about 2 cups) of kefir at room temperature. Add 1 teaspoon of salt, 1 teaspoon of baking soda, and 1 tablespoon of sugar. Mix well.
Step 3
Add 2 tablespoons of vegetable oil to the kefir mixture.
Step 4
Add 350 grams (about 2 ¾ cups) of sifted all-purpose wheat flour and stir until combined.
Step 5
Add 100 grams (about ¾ cup) of rye flour and mix everything thoroughly.
Step 6
Continue mixing until the dough reaches a smooth, even consistency.
Step 7
Line a baking sheet with parchment paper. Sprinkle 30 grams (¼ cup) of wheat flour and 30 grams (¼ cup) of mixed grain flakes (five grains) over it and mix.
Step 8
Place the prepared dough on the baking sheet and sprinkle the top with the same flour and grain flake mixture.
Step 9
Shape the dough into a round loaf using your hands.
Step 10
Make several deep cuts on top of the loaf with a knife. Bake in a preheated oven at 446°F (230°C) for about 30 minutes until golden and fully baked.
Step 11
Once baked, remove from the oven, place the bread on a table, and allow it to cool slightly.
