Watermelon in Jars for Winter (No Sterilization)

Step 1
How do you salt watermelon in jars without sterilization? Prepare all ingredients. It’s best to do this in August, when the main ripening season starts - then you can be more confident the fruit ripened without heavy chemicals. Choose watermelons that aren’t overripe, are sweet, and preferably have few seeds. Before cutting, wash the watermelon very thoroughly in warm water with soap and a scrubber, then rinse.
Step 2
First prepare the jars and lids. Wash them in hot water with baking soda and rinse well. Pour water into clean jars to a height of about 2 cm (about ¾ in) and place in the microwave. Sterilize on full power for 4 minutes. Or steam them for 10 minutes.
Step 3
Put the lids in a pot, cover with water, and boil over medium heat for 10 minutes.
Step 4
Cut the watermelon flesh away from the rind without touching the white part, and cut into medium pieces. They should fit in and out of the jar easily. Loosely pack the watermelon pieces into the sterilized jar.
Step 5
Boil water and pour it into the jars with watermelon all the way to the top. Cover with lids and let stand for 5 minutes.
Step 6
Drain the liquid into a pot.
Step 7
Add sugar to the pot and stir. You can use white sugar, or brown/cane sugar.
Step 8
Add salt. Use coarse, non-iodized salt. Put over medium heat and bring to a boil. Simmer for 5 minutes over low heat.
Step 9
Pour in the vinegar and remove from the heat.
Step 10
Immediately pour the boiling marinade into the jars and seal tightly with the boiled lids.
Step 11
Turn the jars upside down and wrap in a warm blanket. Leave until completely cool. Then store in a dry, cool, dark place - ideally a cellar or refrigerator. Before serving, chill the watermelon.
