Watermelon and feta salad

A refreshing summer salad combining juicy watermelon, crisp cucumber, tangy feta, and fresh mint, all tossed in a sweet and sharp honey-vinegar dressing. Perfect as a light side or standalone dish.

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Place the sliced onion in a large mixing bowl and pour over the vinegar. Let it sit for 10 minutes to slightly pickle and mellow the flavor.
Step 2
After 10 minutes, whisk the honey and olive oil into the bowl with the onions and vinegar, and season generously with salt and pepper.
Step 3
Peel the watermelon and cut it into chunks about 2–3cm (approximately 1 inch) in size, removing any obvious seeds. Slice the cucumber into slightly smaller pieces.
Step 4
Add the watermelon and cucumber to the bowl with the dressing. Tear or roughly chop the mint and add it in, followed by the crumbled feta.
Step 5
Toss everything together gently to combine, ensuring the dressing coats all the ingredients evenly. Serve immediately for the freshest flavor and best texture.
