Preparation
Step 1
Prepare the ingredients. Fresh ginger can be replaced with ground dried ginger. Instead of regular vegetable oil, you can use olive oil or, for a more pronounced flavor, sesame oil.
Step 2
Rinse each bok choy leaf in cold water and pat dry. Separate the green leafy parts from the white stalks.
Step 3
Cut the thick white stalks into small pieces.
Step 4
Chop the green leafy parts into similar-size pieces.
Step 5
Heat the vegetable oil in a frying pan. Add the white bok choy pieces and stir-fry over high heat for about 1 minute.
Step 6
Add the green bok choy leaves, stir and cook for a few seconds.
Step 7
Peel the garlic and ginger. Finely grate them and add to the pan. Adjust the amounts to taste. Add the sugar, paprika and ground black pepper, stir and cook for another 1–2 minutes.
Step 8
Season with salt to taste and remove the pan from the heat.
Step 9
Serve warm, sprinkled with a little sesame seed.
