Preparation
Step 1
Prepare the ingredients. You can replace the rice flour with oat, corn or another flour, but keep in mind that the amount needed may vary. The sweetener can be replaced with 50–60 g, or about ¼ cup, of regular sugar, powdered sugar, molasses or honey.
Step 2
In a bowl, combine the room-temperature kefir, egg and sweetener. Whisk until smooth.
Step 3
Add the rice flour sifted with the baking powder and whisk again until smooth. You may need slightly more or less flour depending on the consistency of the kefir, the size of the egg and the flour itself. If making the waffles for the first time, add the flour gradually.
Step 4
The batter should have the consistency of fairly thick sour cream. If it is too thick and lumpy, add a little more kefir. If it is too runny, add a little more rice flour.
Step 5
Preheat the electric waffle maker. Pour in a portion of the batter, close the lid and cook for 5–7 minutes, until golden.
Step 6
Cooking times vary between waffle makers, so adjust the suggested time according to your appliance. If the waffles tend to stick, lightly grease the plates with vegetable oil or melted butter before cooking each batch.
Step 7
Transfer the finished Viennese waffles to a plate and serve warm or cooled, garnished with berries and mint if desired.
