Preparation
Step 1
You can use fresh or frozen viburnum berries. The berries are naturally bitter, but freezing reduces the bitterness. Bitterness is a characteristic of viburnum drink and not everyone likes it. Rinse the berries in cold water.
Step 2
Remove the berries from the stems and put them into a food processor. It’s convenient to cut the berries off the branches with small scissors. Crush the berries. You can also use a meat grinder or simply mash them thoroughly with a fork.
Step 3
Strain the crushed berries through a sieve.
Step 4
Put the remaining pulp into a saucepan, add water, and bring to a boil. Do not boil, as it will change the color of the drink.
Step 5
Strain the resulting broth.
Step 6
Add the previously strained juice to the drink. Sweeten to taste with sugar. You can also replace sugar with honey, which will slightly change the flavor of the drink.
Step 7
Pour the finished drink into a pitcher and enjoy. You can dilute the drink with water to make it less concentrated. Enjoy your meal!
