Very simple waffles

Light, crisp, and fluffy homemade waffles made from a whipped egg white batter. Perfect for breakfast or brunch. This classic waffle recipe delivers golden results with just the right crunch.

Preparation
Step 1
Begin by heating your waffle iron according to the manufacturer’s instructions - some may need to be lightly oiled before use.
Step 2
In a large measuring jug, combine the milk, egg yolks, oil, and vanilla. Beat together until smooth. In a separate large bowl, mix the flour, baking powder, sugar, and salt. Pour the wet ingredients into the dry ingredients and whisk until you have a smooth batter with no lumps.
Step 3
In a clean bowl, whisk the egg whites to stiff peaks. Gently fold the beaten egg whites into the batter, working slowly to maintain an airy, thick consistency.
Step 4
Once your waffle iron is properly heated, pour about 250ml of the batter into one side of the iron. Close it and cook for 1 minute, then flip and cook the other side for 2 minutes. If you're using an electric waffle iron that doesn't flip, simply follow the timing recommended in its instructions - this may mean cooking slightly longer.
Step 5
Carefully remove the cooked waffle from the iron. Repeat with the remaining batter. If you’re not keeping the waffles warm in a low oven, serve each one immediately after cooking for best results.
Step 6
Serve warm with fresh berries, honey or maple syrup.
