Preparation
Step 1
Preheat your oven to a low temperature (around 120°C/250°F). Place the broken chocolate and unsalted butter in an ovenproof bowl and warm in the oven for about 15 minutes. Once softened, stir until smooth and fully combined. Set aside to cool slightly.
Step 2
In a small saucepan, combine the sugar and water over low heat. Stir gently until the sugar dissolves, then increase the heat and boil for a few minutes until it forms a light syrup. It’s ready when a small drop on a cold plate stretches into a thread between your fingers. Remove from heat and let cool for a minute.
Step 3
In a mixing bowl, start whisking the egg yolks (using an electric mixer, if possible). Slowly drizzle in the hot syrup while continuing to whisk. Keep whisking until the mixture becomes pale, thick, and mousse-like.
Step 4
Whisk in the cream until fully incorporated. Gently fold in the melted chocolate and butter mixture until smooth and well blended.
Step 5
Pour the mixture into an ice cream machine and churn according to the manufacturer’s instructions until frozen.
