Vermicelli with Ground Meat

You can replace tomato paste in this recipe with canned tomatoes, fresh tomatoes, or ketchup.
Preparation
Step 1
Choose any vermicelli, such as angel hair. The key is to use pasta made from durum wheat—it holds its shape better. You can use any ground meat; here, I use homemade ground pork, but store-bought works too.

Peel and finely chop the onion.
Step 3
Heat a pan over medium heat and add cooking oil. Sauté the onion for about 2 minutes until soft. Then add the ground meat. At the same time, put a pot of water on the stove for cooking the vermicelli.
Step 4
Reduce the heat and cook the meat, breaking it apart, for about 5 minutes until the color changes from pink to gray. Season with salt and pepper. Add tomato paste or substitute with tomato sauce or finely chopped fresh tomatoes (peeled). Pour in about ½ cup of water.
Step 5
Stir and simmer the meat under a lid on low heat for about 10 minutes. If the water evaporates, add more to achieve your desired sauce consistency. Meanwhile, bring the pot of water to a boil, add salt, and cook the vermicelli according to package instructions (or slightly less, to keep it firm).
Step 6
Drain the cooked vermicelli and add it to the meat sauce. Stir well, cover the pan, and let the dish heat for a couple of minutes on low heat, ensuring the pasta absorbs the flavors without overcooking.
