Vegetable Stew with Potatoes and Cabbage
A delicious and incredibly hearty meatless dish. Add your favorite spices to the potatoes and cabbage to give it a special touch and flavor. You can serve the vegetable stew with sour cream or ketchup. Both adults and children will enjoy it.

Preparation
Step 1
First of all, prepare all the ingredients. Peel the potatoes, onion, garlic, and carrot, then rinse them well in clean water. Rinse the tomatoes, herbs, bay leaf, and cabbage under running water.

Slice the onion into thin half-rings or small strips. Grate the carrot on a coarse grater.
Step 3
It is best to cut the potatoes into medium-sized cubes. Why medium-sized? If you leave the potatoes in large pieces, the cooking time of the potatoes and cabbage may not match, and there is a risk that the cabbage will turn mushy. However, if you are using an older cabbage head, you can cut the potatoes a little larger, because in that case the cabbage will take a bit longer to cook.

Cut the tomatoes into small cubes. If you like, you can peel them first. To do that, pour boiling water over the tomatoes, leave them for a couple of minutes, then drain the water and remove the skins without much effort.
Step 5
Place a skillet with vegetable oil over high heat. When the oil is hot, add the onion and carrot. Stirring from time to time, fry the vegetables for about 2-3 minutes, until the onion becomes slightly translucent.
Step 6
Add the tomatoes to the sautéed vegetables, stir, reduce the heat slightly, and simmer everything together for about 5 minutes.
Step 7
Meanwhile, let’s prepare the cabbage. You can cut it into small squares or shred it into short strips. Choose whichever way you prefer.

Add the potatoes to the skillet.

Then add the chopped cabbage. Season with salt and add your favorite spices to taste. Carefully mix everything and leave it to simmer over very low heat with the lid on for 20 to 30 minutes. After 5 minutes, lift the lid and check whether there is enough liquid in the skillet from the tomatoes and cabbage. If not, add just a little water, about 50-60 g, roughly 3-4 tablespoons, mix everything again, and continue cooking covered.
Step 10
Open the lid from time to time and stir the stew, while also checking whether the potatoes and cabbage are sticking or burning. A few minutes before it is done, add the bay leaf if desired. At the end of cooking, add the chopped herbs and finely minced garlic to the stew. Mix everything and remove the skillet from the heat.
