Vegetable Soup with Meatballs and Green Beans

Preparation
Step 1
First, prepare all the necessary ingredients and spices for this hearty soup with meatballs and young green beans.
Step 2
In a large bowl, place 250 grams (about 9 oz) of mixed ground meat and add half of a finely chopped large onion.
Step 3
Add salt and ground pepper mix to taste. Mix well until the mixture is uniform, then beat the mixture a few times by hand to help the meatballs hold their shape during cooking.
Step 4
Place a pot on the stove over medium heat. Pour in 3 tablespoons of vegetable oil and heat it. Add the remaining half of the chopped onion and sauté.
Step 5
Grate one medium carrot on a large grater and add it to the pot with the onion. Stir and continue sautéing over medium heat.
Step 6
Rinse 200 grams (about 7 oz) of young green beans, trim the ends, cut into small pieces, and add to the pot. Stir and sauté everything over medium heat.
Step 7
To prepare the meatballs, pour 4 tablespoons of wheat flour into a deep plate. Shape small meat portions, coat them in the flour, roll into firm balls, and place on a plate.
Step 8
Cut one bell pepper into thin half-rings and add to the pot. Stir and let the pepper warm up for about 2 minutes. Add salt and some khmeli-suneli spice mix to taste.
Step 9
Pour about 2 liters (8.5 cups) of boiling water into the pot with the vegetables and green beans. Bring the soup to a boil over high heat.
Step 10
Gently add the meatballs into the boiling soup. Let it return to a boil on high heat.
Step 11
Reduce the heat to medium and continue cooking for 10-15 minutes until the meatballs are fully cooked. Then add finely chopped parsley and pressed garlic to taste.

Pour the freshly made soup into serving bowls and serve hot.
