Preparation
Step 1
First, prepare all the necessary ingredients. You can mix or replace the vegetables to your taste. Wash and pat them dry. Leave cherry tomatoes whole (remove them from the vine if needed).
Step 2
Clean the corn by removing husks and silk, then slice it into medium-thick rounds. The younger and juicier the corn, the tastier it will be when baked.
Step 3
Remove seeds and stems from the bell pepper, then cut it into medium cubes.
Step 4
Slice the zucchini into thin ribbons using a vegetable peeler. If you don’t have one, slice thinly with a knife. You can also simply cut the zucchini into thin circles if preferred.
Step 5
Cut the eggplants into ½-inch (1.5 cm) thick slices. Choose small, slender eggplants if possible.
Step 6
Place all the vegetables in a large bowl. Add pressed garlic, vegetable oil, lemon juice, dried herbs, and spices.

Mix well and let marinate for 30 minutes.

While the vegetables marinate, soak bamboo skewers in cold water for 30 minutes to prevent burning. (Mine were 10 inches / 25 cm long.)
Step 9
Thread the marinated vegetables onto skewers in any order you like. You should get about 12 skewers. If you have leftover marinade, brush it onto the skewers during baking.
Step 10
Place the skewers on a baking sheet lined with parchment paper or in a baking dish. This helps prevent juices from dripping onto the oven floor. Bake in a preheated oven at 180°C (350°F) for about 30 minutes, turning occasionally. The exact time depends on your oven and the size of the vegetables. If some pieces start browning too fast, cover them with foil.
