Vegan Potato Patties with Mushrooms

Preparation
Step 1
Prepare all the necessary ingredients. Use neutral vegetable oil (without a strong smell).

Wash, peel, and boil the potatoes in salted water until tender.
Step 3
Drain the water. Mash the boiled potatoes with a masher until smooth and lump-free. Let the mashed potatoes cool.
Step 4
For the filling, champignons work best. If you’re using forest mushrooms, boil them first in salted water. Wash and dry the champignons, then chop them finely.

Peel and finely dice the onion.
Step 6
In a skillet, sauté the onion for about 5 minutes, stirring occasionally. Add the mushrooms and continue frying until cooked through. Salt the mushrooms halfway through cooking.

To the cooled mashed potatoes, add flour and 2 tablespoons of vegetable oil. Mix well and let the potato mixture rest for 10 minutes. This allows the flour to absorb moisture, making the dough more elastic.

To shape the patties, you can use plastic wrap. Place a portion of the potato dough on it and flatten into a round patty.

Spoon about 1-1.5 tablespoons of mushroom filling onto the center of the patty.

Using the plastic wrap, gently lift and join the edges, forming a stuffed patty.

Repeat with the remaining potato dough and filling.

Pour breadcrumbs onto a shallow plate and roll each patty in them from all sides.

Heat vegetable oil in a skillet. Place the patties and fry over medium heat until golden brown on one side.

Turn the patties and fry until golden and cooked through on the other side.
