Vegan Poppy Seed Roll

To ensure the oven reaches the correct temperature, preheat it 10–20 minutes before baking.
Preparation
Step 1
Measure all the ingredients. Use refined vegetable oil. Warm the water slightly.
Step 2
Sift the flour to enrich it with oxygen - this helps the dough rise and makes the pastry fluffy.
Step 3
In a small bowl, mix the yeast with 1 tsp sugar and about ¼ cup (50 ml) of warm water. Stir until smooth. Let it activate for 10-12 minutes until foamy.
Step 4
In a large mixing bowl, dissolve the remaining sugar, salt, and vanilla sugar in the warm water. Stir.
Step 5
Pour in the vegetable oil and mix again.
Step 6
Add the activated yeast mixture and stir well.
Step 7
Gradually add sifted flour. Don’t add all at once - you may need a little more or less. Stir the dough with a spoon.
Step 8
Continue adding flour in small portions and knead the dough by hand. Adjust as needed.

The dough should be soft, smooth, and not sticky. Cover with a towel and leave in a warm place for 70-90 minutes to rise.

While the dough rises, prepare the filling. You can replace honey with sugar. Add nuts or dried fruit if desired.

Soak raisins in hot water for 10-15 minutes. Drain and pat dry with paper towels.

Pour poppy seeds into a small saucepan and add water (2 parts water to 1 part poppy seed). Bring to a boil.

Simmer poppy seeds over medium heat for 10-15 minutes.

Turn off heat, cover, and let sit for another 10 minutes.

Strain poppy seeds through layered cheesecloth to remove excess liquid.

Combine poppy seeds and dried raisins. Grind them using a mortar or blender.

Add honey (or sugar) and lemon zest. Mix thoroughly.

Once the dough has doubled in size, punch it down and transfer to a floured surface.

Roll the dough into a rectangle about ¼ inch (0.2 cm) thick.

Spread the filling evenly, leaving ½-1 cm around the edges to prevent spillage.

Roll it up so the seam is on the bottom.

Carefully place it on a parchment-lined baking sheet. Cover with towel or plastic wrap. Let it rest 15 minutes. Optionally, brush with sugar water.

Bake at 350°F (180°C) for 30-35 minutes until golden. Adjust time to your oven.
