Vegan courgette and sweetcorn fritters

These crispy courgette and sweetcorn fritters are packed with fresh vegetables and plant-based goodness.

Preparation
Step 1
Grind the linseeds using a pestle and mortar or by crushing them in a sandwich bag with a rolling pin. In a small bowl, combine the ground linseeds with 3 tablespoons of water and set aside until the mixture thickens and becomes gelatinous.
Step 2
In a mixing bowl, combine the thickened linseed mixture, flour, and chilli flakes. Gradually whisk in 50ml of water to form a thick batter. Squeeze excess moisture from the grated courgette, then add it to the batter along with the sweetcorn, coriander and spring onions. Mix everything together and season generously.
Step 3
Heat oil in a large frying pan over medium heat. Once hot, spoon the batter into the pan to form three fritters. Fry for 2–3 minutes on each side until golden and crispy.
Step 4
Serve warm.
