Vegan chickpea curry

A fragrant and flavorful chickpea curry simmered with warming spices, tomatoes, and caramelised onions. This comforting dish pairs perfectly with pitta or rice for a satisfying plant-based meal.

Preparation
Step 1
Heat oil in a deep saucepan or medium-sized wok. Sauté the chopped onions and grated garlic over medium heat until the onions are deeply caramelised.
Step 2
Stir in the salt, cumin, coriander, turmeric, and hot pepper powder. Let the spices cook for a minute before adding the chopped tomato. Continue cooking until the sauce begins to thicken.
Step 3
Add 4 tablespoons of water and mix well. Stir in the chickpeas, lightly mashing a few to help thicken the curry. Cover the pan and let it simmer for 5 minutes.
Step 4
Finish by adding the ginger and garam masala, cooking for one final minute.
Step 5
You can serve it hot with warm pitta bread or fluffy rice.
